Since camera sensor can't retain info on overexpose shot, either you underexpose the person, later then work on the photo to bring back the exposure while retain the detail, or shoot in RAW, then convert to JPG while retaining the white detail.

try the following,
set yr metering to multi-segment mode,
flash set to ttl mode,
In multi-segment mode, yr camera will made an intelligent guess to preserve for the highlight.
this is quite useful especially when u shooting a walk-in....where the usually dark room/ hall and walkway is suddenly illuminated with strong light... unless u dead sure how to change yr exposure quickly manually.....multi-segment + aperture mode is quite safe..

now...where our resident wedding photogs?
pls advise what would be yr method?

i'd go with slight under-exposure, and shoot under constant light.

well, how about turn the flash off. Or flash is a must, then -0.5 or more stop flash should help.

about about lowering down flash intensity a bit.. shoot in raw and then edit to desirable output.

slave to the light
let's see...

i would shoot slightly under and if i go flashless, prob use custom WB as well (easier to do it this way than to convert the RAW files, IMHO)...

and it gets burnt that even PP can't pull back all the details, then probably convert to BW and add noise :)
