Who gets the date is dependant on Cloud's behavior, that's been said under the clerith date on the FTOIL page. However, while I believe the Clerith date is the canon one, there's a few things with the Cloti date floating around

For example, on Cloud's 10th anniversary profile the caption reads

Quote:

[FFVII] Both Aerith, who is forthright, and Tifa, who is demure, have feelings for Cloud but he is none the wiser to them

But above it features the date with Tifa.

The song that plays during the gondola ride is "Interrupted by fireworks"

Tifa's sentence is interrupted by the fireworks going off, making Cloud unable to hear what she was trying to say.

Then, in Erghiez if you fight Tifa, the song "Interrupted by fireworks" plays. This song is also not shown with Aerith outside the date, not that I know of anyway.

In Japanese, the song is "words drowned by fireworks" also a reference to Tifa's date.

It's funny that when even they want to confirm their feelings WITH words something happens lol. Guess words arent the only way was their only way. I bet something would have happened on the nighwind if Tifa tried to confess verbally. Like the horn from the airship or something :D

i dont think interrupted by fireworks plays on tifa's stage in ehrgeiz. the soundtrack doesnt list it as one of the tracks, and i dont have any experience hearing it while i played it.

I actually think Aerith's date is canon, but I don't think it means anything romantically towards them. Also I noticed something interesting, and that's that there are a lot of negative options towards Aerith during their date scene. But during Tifa's date scene there are no such options. Perhaps they did this because Aerith's date scene is the default?

Also I'm pretty sure there's evidence outside of the game catering to both date scenes. I'm not sure on that, but I know there are definitely cards (?) for Cloud and Aerith's date scene. And references.

The date with Aerith is an important for plot development. Namely the players get to realise that Cloud as we know him is really a facade and not acting with his genuine personality. I fail to see how his date with Aerith is any more meaningful or romantic than his date with Tifa. Yes the Aerith date is more meaninful to our understanding of Cloud's character progression, note in itself. The date with Tifa is really just fluff. Not really necessary or crucial to plot development but it's cute :)
