Beans Poriyal: Delicious Vegetarian Recipe

South-Indian cuisine is a blessing for vegetarians. It has so many varieties of delicious vegetarian recipes to choose from. Beans poriyal is one such vegetarian recipe which gets ready in minutes and tastes extremely delicious.

The recipe of beans poriyal is basically prepared with fresh green beans which is stir fried with grated coconut and lentils. This dish has a subtle flavour and a delicious crunchy taste. It is also a very healthy recipe since it is low in calories and packed with protein. Try this easy and delicious vegetarian recipe of beans poriyal and make your meals interesting.

Serves: 3-4
Preparation time: 15 minutes
Cooking time: 15 minutes

Ingredients

French beans- 250gms
Onion- 1 (finely chopped)
Green chillies- 2 (chopped)
Fresh coconut- ½ cup (shredded)
Urad dal (split black gram)- 1tsp
Mustard seeds- 1tsp
Cumin seeds- 1tsp
Turmeric powder- 1tsp
Dry red chilli- 1 (broken)
Curry leaves- 8-10
Hing (asafoetida)- a pinch
Salt- as per taste
Oil- 1tbsp
Water- 1½ cup

Procedure

Wash the beans properly. Trim the ends and chop the beans into small pieces.
Boil the beans in about a cup of water for 5-6 minutes on low flame.
Once done, drain the excess water from the beans and keep it aside.
Heat oil in a pan. Add mustard seeds, hing, cumin seeds and dry red chilli one by one. Fry for a minute on medium flame.
Now add the urad dal, curry leaves and onion. Fry for 3-4 minutes.
Add the green chillies, turmeric powder, salt and French beans. Saute for another 2 minutes.
Now add the grated coconut and mix well. Stir fry for 3-4 minutes on medium flame.
Once done, switch off the flame.
