Your eagle plate is beautiful, Carole. I agree, it should be on display in your livingroom. Thank you to the person who donated these for the fundraiser, it was a very kind and generous way to help the eagles. Thanks for the lemon squares recipe, I love lemon anything.

Cheryl - One of my closest girlfriends, like me, is a lemon lover. When I invite her and her DH for dinner there is always a hint for lemon meringue pie and I always make it for them. Now they are hooked on the lemon squares too. Here is one of her lemon deserts, it's to die for but it takes a long time to prepare. ELLEN’S LEMON ICE CREAM MERINGUE CAKE 3 EGG WHITES PINCH CREAM OF TARTAR - WHIP ADD 1/3 CUP SUGAR AND ¾ TSP. VANILLA. PLACE ON BUTTERED PAPER FORMED INTO TWO CIRCLES BAKE AT 250 FOR 1 HOUR. DRY FOR ANOTHER 2 HOURS IN OVEN SAUCE. 2 EGGS PLUS 2 EGG YOLKS 1 CUP SUGAR 6 TBSP. BUTTER 1/3 CUP LEMON JUICE 1-1/2 TBSP. LEMON RIND HEAT TILL THICK BUT DO NOT BOIL COOL IN BOWL AND CHILL COVERED WITH BUTTERED WAX PAPER. ASSEMBLE AS FOLLOWS: MERINGUE SAUCE ICE CREAM SAUCE ICECREAM SAUCE ICE CREAM MERINGUE FREEZE EACH LAYER SEPARATELY THEN ASSEMBLE USE VANILLA ICE CREAM |

I love lemon anything (except on fish for some reason) and I love LIME even more! I'm having an afternoon Tea next Saturday for all my friends (to check out my new digs) and may use your recipe Carole! (sorry Harpo, your recipe takes just far too long but it sounds yummy). Very saddened and disturbed to hear about the W.Crane decline in numbers, and worse still, they dont know why. That is upsetting and I hope next year brings better results. So many obstacles! CAT IS OUT FISHING, and I'm sure she is having a fantastic Birthday!

Ozzie - The first thing I put on is lemon. Enjoy your afternoon tea with the girls and I know the Lemon Squares will be a big hit. It's always fun getting together with your friends and catching up on all the news. I am sure they are going to be very impressed with your new place after all the work you did, it looked so pretty in your photos.Your photo for Cat's Birthday is the best, where do you find these things? She is going to love it. Forgot to mention I love Key Lime pie too but will have to wait until we get to Florida as that is the specialty down there.

I think I dont like lemon on fish because I prefer to taste the flavor of the fish by itself, the lemon hides it. I have had lemon on my 'chips' which isnt too bad either! I love to marinate chicken with lemon or lime, to me it enhances (rather than hides) the flavor. It wont be just the girls coming (husbands coming too), and there will be more than just tea to drink. I just called it that because its late afternoon, and the Prime Ministers Sydney Residence is just down the street, so my invites were "Afternoon Tea at Kirribilli..... but not with the Prime Minister." I'm (and DD) making cupcakes too. They wont be nearly so pretty as Cathy's though, I dont have the touch.Going out for a long walk this Friday beautiful early spring day. I didnt go the office,there wasnt any work! I hope that changes soon, or I'm going to have to find another job! I found that photo in PB and snagged it! I thought it appropriate! |

Carole, I just got done making your lemon square recipe. Very easy, and they look yummy, too! I have to let them cool before I cut them. I'll take some to work tomorrow - I bet they are a hit with everyone there! Thanks for sharing your recipe.
