Basic Muffin in a Minute For the MIM, I have found that if you stick to approximately these proportions, it will work fine: 4 TBLS Dry Ingredients 2 TBLS Wet Ingredients 1 Extra large egg 1/2 tsp baking powder 1/2 to 1 tsp spices/extracts Dry ingredients I have used (in various combinations) flax meal, almond flour, oat fiber, protein powder, coconut flour. Wet ingredients I have used (in various combinations) SF syrup, cream, oil, water, almond milk, chia gel Note: If you use coconut flour, you have to add more of whatever wet ingredients you are using. Beat wet ingredients (including egg), stir dry together, mix wet with dry. Oil/spray a large mug or bowl (depending on what shape you want). Pour mixture in and microwave. Chocolate MIM - had this this morning, yum 2 tblsp flax 2tblsp almond flour 1 tblsp cream 1tblsp coconut oil 1 large egg 1/2 tsp baking powder Tablespoon of cocoa Special Treat: I also added a tablespoon of cream cheese in the center of the mix before microwaving per Linda Turner Wilkinson's suggestion 394 kcal Carbs 10gm without the cream cheese Fat 35gms, Protein 14gms 479 kcal Carbs 12 gm with cream cheese, Fat 43gms, Protein 16gms Edited by JennaRose, September 20, 2013, 9:29 am.

This is a lower calorie Flax muffin, in case you "need" the benefit of the flax but want to add, oh I dunno, bacon:) to your breakfast 1/4 cup flax seed meal 1/2 teaspoon baking powder 1/4 teaspoon stevia or splenda powder 1 teaspoon cinnamon or garam masala 1 egg 1 teaspoon oil 229 Kcals 2mg carbs 15 gms protein 16gm fat |
