Basic Cheesecake (8 servings) Crust: 1 cup finely ground almonds * ¼ cup butter (melted) Filling: 16 ounces of cream cheese (room temperature) Sweetener to equal 2/3 cup** 2 eggs (slightly beaten) 1 cup of sour cream 1 TBLS vanilla extract Directions: Pre-heat oven to 350F°. Mix pecans and butter, press into the bottom of a 10in. spring form pan. Bake for 10 minutes, set aside to cool. Mix together the cream cheese and sweetener until creamy. You can use a food processor or hand mixer, I have used both with equal success. Blend in eggs, and then add sour cream and vanilla extract. Blend well and pour into cooled crust. Bake for 20 to 25 minutes. The center should be almost set, but still a bit jiggly. Cool on a wire rack, and then chill. *You can use pecans, walnuts, almonds or any combination of nuts; the values below are using all almonds. **Counts will vary, depending on sweetener, I use a combination of Stevia & EZ-Sweetz (liquid sucralose) so no carbs or calories there. Per Serving: (not including sweetener) Calories – 399 Fat -33.6 g Carbs-6.8 g Fiber- 1.3 g Net Carbs – 5.5g 76% Fat, 7% Carbs, 17% Protein |
