POSSUM DOGS; GREAT TIME WITH THE CAJUN

Jimmino and I went to see The Cajun saturday evening in St Martinville, La to bring him his Mullins pup and make a little hunt.

Calvin has a young Hybrib male name Hank that is a little hunting maching and is starting to tree pretty good.

Hank really put it on our dogs, my two Kemmers- Mullet and Duke and Jimmino's Plott pup Rock!!

In the pic! Hank is the little yellow dog on the left standing on his hind legs and treeing his heart out. Most of our dogs could only watch this little treeing machine. The others did help a little but did not have their heart in it like Hank!!

I told Jimmino that when you are in Roam, you have to act like the Romans!! Hank thought we were possum hunting and not coon hunting so we did not want to hurt his feelings!!lol.

Seriously, I would owned this Hank pup in a minute. He hunts really well and is looking for game every stept including the "pole cat" that sprayed him at the end of our hunt. I told Calvin that dang dog of his rubed up againist my leg on purpose. I could smell skunk all the way home.

The coon were not stiring for us Saturday night as we roaded for quiet a few miles. Maybe a coon dog could have done something but these young dogs had a ball and we just enjoyed the fellowship and did see some good tree work even thought those funny looking coon in cajun land look a lot like our possums!!!lol.

Calvin we will try it again soon!! my friend!

sidenote: The highlight of our visit was when Calvins son, Todd invited us to come eat some squirrels that he had cooked. They were the best I have ever eaten even thought it took me three plates full the come to that decision. Jimmino lives off of wild game and he loves squirrels and he even said that they were the best he has ever ate.

Charlie we really enjoyed you and Jimino as always. Next time ya'll come we will try to have some smothered Possum for you and Jimino to try ...lol

Nice pic, bet you guys had a great time. Calvin, when I went to Maine a couple of years ago on a bear hunt, I asked some of the guides if bear meat was any good, and all of them except one turned their nose up and said if you were starving, it would get you by. Well, the one that didn't turn up his nose was a cajun and had the cajun accent. His wife was a cook at the lodge. Well, he cut a big roast out of a rank old bear(old male), and took it home and marinated in a recipe of his own. The next day, he brought a small propane grill, and cooked that bear roast and it was some of the best meat I have ever eaten, I knew then that I would never get in a cooking contest with a soft spoken cajun, he sure could make it good. I even got the recipe for his marinate, and it is good on any meat, thx, James.
I hunt the "PURE" KEMMER MEAT DOGS.
No byproducts!!!!

Hey Calvin,

I grew up living with my grandparents where I watched (and enjoyed) every episode of Justin Wilson's cooking show. We even had a record (LP) or 2 of his to go along with our Jerry Clower collection. You could say that I'm semi-fluent in Cajun.

Justin always said "First you make a roux". :D

My son tells me that you should use a cast iron first of all. Then fry the squirrel meat in the cast iron pot take out the meat put in onions for 12 squirrel about 4 chopped large onions. Saute the onions well then add back the squirrel .Fill the pot half full of water cover and slow cook for 2 to 2 1/2 hrs. Of course add what ever amount of red pepper and salt you can handle. Keep adding water as it goes down. When cooked you should have a good dark gravy. Cook about 6 cups of rice make plenty of room at the table and call me...lol

That's the way I like a recipe--not too much to remember. I'll try that just as soon as a few more of these leaves fall off. Its hard to find enough for a meal right now.
