Calvin, everytdhing is in the pot now, sausage, chicken, onions, celery. green peppers. Rice in another pot, can't wait.

Creek Dog we have Chicken sausage here at the supermarkets all over Cajun Country.

Calvin, it was absolutely delicious, but the 2 cups of crushed habenero peppers from my garden, was probably abit much. Gotta feeling I will he praying for cold weather by the morning. :D Next time, I'll try it without so much fire, harbeneros are HHHHOOOOOOTTTTTTT.

I still cant recall seeing any.I use Savoie's as my stand by when i cant my teeth on some home made or meat market sausage.Home made with wild pork and green onions & garlic are my favorite!

Thomas you and James both will find out that each time you make gumbo it will be easier than the last time because you will know more of what you want in it and the main thing is you will get a little better with making the roux each time to match your taste. You will find out that the color of the roux has everything to do with the way the gumbo turns out to taste. The darker the roux the more falvor you will have. You got it looking pretty good Thomas. One more thing Thomas, if you start trying to speak a little cajun talk after you get through eating a bowl of it don't be alarmed this only means that you put in a little toooo much cayenne pepper. :'( .....................Big Ronnie

lol That's funny James........... Ronnie I think next time I will make the Roux darker. Did do it about like Peanut Butter this time but will keep it over heat a little longer next time and see what difference it makes.

Chicken sausage?I had never heard of chicken sausage until Cajuns post.Are chicken sausage home made or can you buy em at the market?.........
I was looking at Homeland sales ad in our newspaper and thay had chicken sasuage advertized on sale.
