Rob I didn't know you hung around the old dairy.I didn't go there but many of my friends did. I make a Seafood Gumbo with Shrimp, Lump Crab meat , and Oysters. I do the same as the Chicken and Sausage. I put water boiling in about a 3 gallon pot. Add Savoys Cajun Roux till the water gets a little darker than peanutbutter and add about 3 chopped onions 1 bell pepper and boil that for 3 hrs add salt and pepper as much as you like some like it hotter than others. After it has boiled 3 hrs add 5 lbs of shrimp,1 container of lump Crab meat 1 pint of Oysters but drain the liquid out of the Oyster container first . Let the Gumbo boil for another 20 minutes and that should do it . Lock the doors and close the blinds and the shutters to keep the neighbo rs out and it will last you a day or 2...

Yes Poppasmith , years ago it was a happening place , Was at Birds Of A Feather on a regular basis , got to where the trip was just to hard on my back It took days just to get over the trip .Old habbits are hard to break , 35 years and I still can't get it out of my system. |

I have a good friend who was a regular there and I may have the wrong strain of birds but I think he was a good friend of the Kelso or Clarit and maybe Hatch breeder and got some stock from them. My friends name is Gene Landry. Most people who know him would say he is nuts...

No James you just put in the peeled shrimp ,crab and oyster and let boil no browning on seafood.

Calvin we tried your gumbo recipe last night. I was impressed. The roux really makes a difference, gives it a bolder taste. We added crawfish tails and some bay leaves and old bay seasoning and cooked some crawfish and grits to go with it. It was a big hit expecially with the snow still on the ground. One of these days im gonna come visit with you and get a bowl from the man himself. LOL |
