Back home from the pooch gig.

My sister & I went & had our taxes done yesterday afternoon. AARP provides a free service via our local library. You set up an appointment & an accountant does your return, a different accountant checks the work, & POOF! with the touch of a finger the return is fired off into the IRS portal. The amount I owe (SS on my pet-sitting income) is less than I had calculated by about $20, so that's nice.

I was going to make the extra-spicy ginger cookies today, but there are no eggs in the house. Maybe I'll "borrow" an egg from the neighbors & give them a plate of cookies in return.

LW, I just caught up on yesterdays thread & saw you mentioned Chicken Cacciatore. Do you have a recipe???

Farmma I do. It's really easy. I used boneless skinless chicken thighs. I also doubled the recipe. The juice is kind of runny so I made pasta with sauce on the side and topped it with the chicken and veggies and left the juice in the bottom of the pan. You might be able to thicken it with more paste

This Crock Pot Chicken Cacciatore is the perfect slow cooker recipe for two or can be doubled to feed a larger family. This is a classic dish that everyone loves-delicious chicken with bell peppers, tomatoes and mushrooms. This recipe is an altered version from The Complete Slow Cooking for Two Cookbook

Ingredients

• Two Chicken Quarters leg and thigh- optional: with skin removed
• 1/2 teaspoon dried oregano
• 1/2 teaspoon dried basil
• 1/2 teaspoon salt
• 1/8 teaspoon pepper
• 1 onion- chopped
• 1 bell pepper we used red bell pepper- sliced
• 1 cup sliced mushrooms we used cremini or baby bella
• 3 cloves garlic minced we used freeze dried garlic instead
• 3 tablespoons tomato paste we used the basil, oregano and garlic flavored
• 14 oz can diced tomatoes- undrained we used the basil, oregano and garlic flavored
• 8 oz can tomato sauce we used the basil, oregano and garlic flavored






Instructions


1.In a 4 quart slow cooker (we used this one) combine onion, mushrooms and bell pepper.


2.Combine oregano, basil, salt and pepper and sprinkle chicken with mixture.


3.Place seasoned chicken on top of onion, mushrooms and peppers.


4.Mix tomato paste, sauce and tomatoes and then pour on top of chicken.


5.Cook on low for 8 hours.

DBF and I took advantage of the AARP tax help at our library too. Everyone’s was really nice there. It took a couple of hours, but well worth it. They don’t take appointments at our branch. I really should have gone earlier, but we have been busy.

I would happily loan an egg to my neighbor, if it was returned in the form of ginger cookies. :D

Hi gang...greetings from the middle of Nebraska where we are contemplating snow. Yes, the bane of my existence of late. We are hoping to avoid it; this might be accomplished by going down into Colorado before heading north again. Good thing we built extra days into this trip; at least we are not panicking about getting to our ultimate destination next week. argh.

So....my day was a little bit of fun and a little bit craptastic.

Mom, Twin, Little Sis, and I met with the minister who will be conducting Brother's memorial service on Monday. After a half hour, it was clear the minister didn't want to hear any more of our memories of Brother and even said she hoped we wouldn't mind a very short service. Well, okay, then.

Then Mom got a bit testy about wanting a flag. This is something the funeral home would take care of but Brother's wife has decided to keep his ashes so we have nothing to bury and no need for the services of the funeral home. So off we sisters go to the Post Office (where the flags are; who knew?) and the nice lady there filled out a form and gave us a flag even though she was sure she probably shouldn't since we had nothing to offer to prove Brother had passed or was in the service.

Then it was to the church where, again, Mom got testy about things. Mostly that our American Legion Post is doing nothing to honor Brother, who is/was a member of the Post. Turns out Mom didn't contact anyone to ask if they would participate, she just expected them to step up. There was no applying logic to her thinking and we just dropped it.

We had to go shopping for a guest book and a good frame for the picture we're displaying. Then it was lunch time so we drove to another town to have lunch at this fantastic Mexican restaurant. Then, because we were "so close", Mom wanted to go to the casino. I had no money so Little Sis spotted me a $20 (which I lost playing a slot machine). As we were leaving, Mom said she was up $40, Twin was up $80, and Little Sis said she was down $10. I reminded her she was actually down $30 ;) :)

Tomorrow Little Sis and I are going to pick out a headstone. Don't know if Mom and Twin are going with us. Then we have to get the flowers arranged at the church. I'm hoping for a little less craptastic tomorrow.

AG. I’m sorry that Mom is being testy.

Had a low key CTJ talk with DS. Shocked to get an unsolicited apology and promise to get back on track....followed by a couple hours of solid conversation. I must admit, DS is heads and tails smarter than I am and politically extremely grounded. I’m so proud of him.... he’s doing dinner tomorrow as apology.
Sigh.... no beat down, screaming match.....massive steps forward! ( even got an admission to all the carp he pulled in jr hi and high school! Glad I was sitting down. There is a God!)

It is good to be off my feet. Had to go to Costco and it was brutal by the time we got done, the guys pulled up Vash's car so I didn't have to walk anymore.
So they made supper while I soaked in the tub.

I'm well aware that it's harsh of me to say so but, even though I know she is grieving, Mom's behavior today is typical behavior for her.

I can't explain it without making myself seem even more of a heartless person than I must already appear to be.

You didn't sound heartless, AG. I was trying to imagine how I would feel in your shoes (devastated), & also how your mother might feel (I couldn't get myself into her shoes, except to guess she must be grieving in her own way)..

I'm very sorry that my wish to comfort & support you missed the mark so badly.. Sending peace & love your way.
