Cajun Fried Crawfish 6 tbsp plain flour 2 tsp salt 1 tsp black pepper 2 tbsp liquid crab boil 2 eggs beaten 2 tbsp milk 2 lbs peeled and deveined crawfish tail meat ½ tsp salt ½ tsp ground red pepper Cooking oil In mixing bowl mix flour, salt, pepper, crab boil, and eggs… Add milk about a tsp at a time, until batter is thick… Season crawfish with remaining salt and red pepper… Add to batter and let stand for 1 hour… Using black iron dutch oven add oil… Heat oil until a kitchen match floating will ignite… Drop crawfish in hot oil a handful at a time. Making sure to separate them as they cook… Fry until golden brown, about 1 minute… Drain on a platter lined with paper towels on top of a brown paper bag… Keep warm until all are cooked, then serve immediately… |
