Blackened Catfish 6 to 8 fillets fish weighing 10oz ea. 3 sticks butter Seafood seasoning Heat cast iron skillet beyond smoking, at least 10minutes… (of course do this outside) Melt butter, then dip fillets in butter, then season well on both sides… Place fillets in skillet, pour 1tsp of butter on each fillet… Have lid handy if it flames up, if it flames up, put lid on top of skillet… Cook uncovered over the same heat until both sides look charred… Then flip and repeat process… Serve hot… |
