Wade’s Crawfish Jambalaya ½ cup cooking oil 1 lrg onion chopped 1 bell pepper chopped 1/2 lbs sliced andouille sausage 1lbs crawfish tailmeat 2 8oz cans tomato sauce 2 cups uncooked rice 1 tbsp chopped garlic 1 tbsp chopped parsley 1 small bunch green onion tops, chopped Crab boil seasoning to taste, or Cajun seasoning Heat in large pot, add onions, and bell pepper and sauté until tender… Add andouille and cook for 3minutes… Then add crawfish and cook for 5minutes… Season to taste… Then add tomato sauce and cook 15minutes…Add rice to pot, and add water until one inch above ingediants… Bring to a boil, then turn fire down low, cover and let simmer… Cook this about 25 to 30 minutes, stirring at times… After cooked stir in garlic, parsley, and green onion… Let sit for 5minutes… |
