Okay, so! I mentioned this in the chat the other day, but thought it might be an interesting thing to do. I enjoy cooking at times, and thought it would be fun to share various types of recipes with the rest of the site.

We have such a variety of ethnicity on this site, I'm sure we have huge number of different recipes to share.

I'm going to break the next couple posts up to act as a table of contents, split by type of recipe. These breaks will include:
• Appetizers, breads, salads, and snacks
• Breakfast and Brunch, entrees, sandwiches, and side dishes
• Dressings and Salads, Dips and Salsas, Sauces and Toppings
• Cakes and Pies, Cookies and Brownies, Desserts
• Casseroles, Soups, Stews, and Chilies
• Drinks and Smoothies
• Other Items: Food Gifts, holiday items, additional things that I realize don't fit elsewhere.

How this is going to work is that as people post recipes, then I'm going to add that recipe to the appropriate post. I'll also be adding a link to the exact post that has that recipe, and note who supplied it as well. If its something I've made, or tried before, I might add my own little comments about it too beside the name.

I don't really care where you get the recipe from. A family recipe? Awesome. Something you made up? I just hope it tastes good when I try it. Maybe its something you picked up online and have been making for a while. Really, I don't care.

The only things that are important to me are these three things:
1. All elements of the recipe need to be present. Ingredients (and amounts) needed for the recipe. Are there any specific knives, pots, pans, etc. needed? The order to combine them, what temperature things need to be cooked at and for how long. That kinda stuff, basically.

2. If there are any ingredients or tools that are hard to come by outside of specific areas, please note acceptable substitutes for those of us who might not be able to get them.

3. Note what kind of recipe it is, so I know how to file it. Also note anything specific about things such as where its from, please.

Other than that, have fun! I'm really excited to see what you have to share with me us!

My mom has officially passed down the "Christmas dessert-making" torch to me this year so I've been making all kinds of sweets! This chocolate peanut butter Ritz toffee recipe is my absolute favourite.

I originally found the recipe online. Here is the link, for the sake of giving credit where credit is due.

You will need:

  • 1 9x13-inch baking sheet
  • Aluminium foil
  • Nonstick cooking spray, oil, or a bit of butter/margarine (to grease the pan)
  • 1 small non-stick saucepan
  • 1 wooden spoon, rubber spatula, or whatever you prefer for stirring!

  • 1 cup of brown sugar
  • 1 cup of salted butter (margarine or unsalted butter will also work)
  • 1 box of Ritz crackers (the original recipe calls for saltine crackers, but I think it tastes better with Ritz. Alternatively, you can use any type of plain salted cracker that you prefer)
  • 3/4 cup of peanut butter (other types of nut butters, like almond butter, could also work)
  • 2 cups of semisweet chocolate chips
  • Sprinkles (optional but add a nice pop of colour!)


You can use more or less peanut butter and chocolate to your preference.

Directions:
1. Preheat your oven to 400 degrees Farenheit. Line your baking sheet with aluminium foil and grease the foil with cooking spray, oil, butter or margarine.
2. Arrange the crackers in one layer on the pan, leaving a bit of space between each cracker, and set the pan aside.
3. Now you're going to make the toffee. Melt the butter and brown sugar together in a saucepan on high heat. Bring the mixture to a boil, and allow it to boil without stirring for 3 minutes. Once the mixture is done, pour it over the crackers, making sure it's distributed evenly in the pan, and put it in the oven for 5 minutes.
4. Take the pan out of the oven, and dollop the peanut butter into the pan. Bake for 1 minute to melt the peanut butter, and then spread the peanut butter evenly throughout the pan.
5. Pour the chocolate chips into the pan, bake for 1 minute to melt the chocolate, and then spread the chocolate evenly, just like you did with the peanut butter.
6. Add sprinkles on top, if desired.
7. Allow the pan to cool and then put the whole thing in the freezer for one hour, or until it's set. Break the toffee into small pieces to serve!

I'm gonna share one of my personal favorite recipes now. This is something I adapted from a different recipe, that I'd found online a while back. The original recipe was for mini Mexican pizzas, but this one is for a more full-size pie. So, without further ado!

Tana's Healthy(ish) Homemade (Mostly) Mexican Pizza Recipe
You Will Need:
  • 1 baking sheet
  • 1 small bowl for mixing
  • 1 spoon, rubber spatula, or other item for stirring
  • 1 spatula for spreading the base coat
  • Knives for chopping various ingredients
  • Pizza cutter
  • Small bowls for housing toppings
Ingredients:
  • 1 pre-made pizza crust (I use Rustic Crust)[1]
  • 2 cups lean ground meat, pre-cooked[2]
  • 1 cup salsa of choice
  • 3 tsp dry taco seasoning
  • 1 cup low-fat refried beans
  • Shredded Mexican Blend or 2% Cheddar cheese to taste[3]
Toppings (Optional):[4]
  • Sliced black olives
  • Shredded lettuce
  • Low-fat sour cream
  • Chopped Tomatos

Directions:
  • Preheat oven, according to package directions
  • Set pizza crust on baking sheet, making sure nothing is sticking to it
  • In mixing bowl, combine your ground meat, salsa, taco seasoning, and refried beans. Stir until well combined
  • Scoop out mixture onto crust, spread evenly over the crust
  • Top with shredded cheese to taste
  • Add any additional ingredients such as chopped tomatoes or sliced black olives that you want to have bake into the cheese
  • Bake in the preheated oven, based on length of time crust required, or until cheese melts
  • When done, remove from oven and allow to cool slightly before cutting
  • Add any additional toppings, or set them in small bowls to the side, if desired!

Note: Baking temperature and time will vary based on the crust you use. Please check the instructions on the packaging to make sure you are following its directions
[1] can be swapped for homemade crust, if you have your own recipe
[2] turkey, beef, or even MorningStar Meatless Crumble, if that's your preference
[3] I use enough to coat the top of the pizza, but you can use less or more
[4] All as you would like, and to taste
