Here are the recipes! Peanut Brittle Ingredients: -Dab of vegetable oil -3 cuts sugar -1 ˝ cups water -1 ˝ cups roasted, lightly salted peanuts -1/2 tsp cinnamon -1/2 tsp cyan pepper powder -Spread vegetable oil around the pan. -Put in sugar, water. -Set to high heat, stir occasionally (wooden spoon) -Once boiled, cover for at least 3 minutes. -Look for a light-amber colour. DO NOT TOUCH. -Turn to medium heat and wait. -Take two cookie sheets. -Sheet 1 – silicone-impregnated fibre-glass -Sheet 2 – liberally lubed with canola / vegetable oil on bottom side. Look for light-amber colour and slow bubbles (350*F, +/- 10*) -Add all the peanuts at once to sugar mixture -Add cinnamon and cyan pepper powder, mix with spoon. -Turn off heat, pour into first pan. -Smooth out, distribute nuts. -Fold outside, flowing part onto brittle -Place lubed pan onto first pan, press gently (to distribute peanuts one-thick) -Let sit, turn over lubed pan and shake to break it up. Sour Candy Ingredients: 1 ˝ cups water ˝ cups lemon juice Ľ cups lime juice 2 tbsp each lemon and lime zest 1 Ľ cups sugar 8 envelopes plain gelatine -Combine lime juice, lemon juice, ˝ cups water and all the gelatine into a large pot. -Combine 1 cup sugar, ľ cup water in a smaller pan over high heat. -Stir a bit, dissolve sugar crystals. -Once at a boil, place tight lid on. Wait 3 minutes. -Place in a candy thermometer, wait for 300*F (hard-crack stage) -Remove thermometer, poor syrup into the gelatine mixture. -Stir constantly (if you get a hunk of sugar stuff, just keep stirring; it’ll melt.) -Set to low heat. -Once gel has dissolved, add lemon and lime zest. -Poor into a 9x9 casserole dish. Let set. -Once set, (approx. 30-60 mins) place on mat and cut into inch-long strips with a pizza cutter in rows and columns. -Put rest of sugar (add to as needed) into a bowl, place a few pieces into it at a time. -Coat with sugar. -Place on a rack, making sure they’re not touching, and let set in a cool place uncovered for 24 hours. |
