The power of eggs

My eyes are looking glassy and clear. Better than they have in years. Why?

I can only assume that it's due to adding egg yolks to my diet.

Years ago I started with raw eggs in the morning. It looked promising but I ha to take a small break. After that I had acquired an egg intolerance and suffered terribly from eating eggs raw or cooked.

However I had a suspicion in the back of my head. That this intolerance was only to egg whites.

And so I separate the yolk from the whites and fry them sunny-side. I've tried 4 yolks each morning for well over a week.

Feeling good.

In addition I tried a little bit of fried egg white yesterday, without the accustomed consequences.

I will continue with this set-up. 1 and 3 halves eggs each day. Fried and soon enough raw. Exciting.

Ps if the hen are fed with soy the eggs turn foul. Not fowl, but foul...

Never heard of that allergy before. But more and more people are becoming more and more allergic to more and more things.
It can get to be a real guessing game as how best to cope.

I've always eaten a lot of eggs; they're one of my staples.
Poached, fried, scrambled, boiled, even omelettes; I went through a short period of sucking them raw from the shell, but not any more.

It's the only food intolerance that I have, or had. I do react to many fresh veggies and fruits but that is connected to my pollen allergies. My mouth swell and itch.

Soy products is no good for me either but I hear it's the same for everyone. The beans are cheap so they end up fodder for kettle. Most humans don't notice.

Gotta love a poached egg :)
