SWEET POTATO BISCUITS w/orange honey butter

Sweet Potato Biscuits with Orange-Honey Butter

Biscuits:

1-3/4 cups all purpose flour, plus extra for work surface

2 Tablespoons light brown sugar

2-1/2 teaspoons baking powder

1 teaspoon Pumpkin Pie Spice

1 teaspoon salt

1/2 teaspoon baking soda

7 Tablespoons cold unsalted butter, divided

3/4 cup cooked and finely mashed plain sweet potatoes

1/3 cup plain Greek yogurt

Orange-Honey Butter:

1/4 cup softened unsalted butter

1 teaspoon honey

1/2 teaspoon grated orange rind

For biscuits: Heat oven to 425 degrees. Place flour, brown sugar, baking powder, Pumpkin Pie spice, salt, and baking soda in a medium mixing bowl and mix well to combine; set aside. Melt 1 Tablespoon of the butter and set aside. Cut the remaining 6 Tablespoons cold butter into pieces, and using a pastry blender, cut butter into flour mixture until mixture resembles coarse meal. In another bowl, mix together the mashed sweet potatoes and yogurt. Stir potato mixture gradually into flour mixture and stir to form a ball. Place the dough onto a lightly floured surface and knead a couple times, then pat mixture to 1-inch thickness. Using a 2-1/2 inch biscuit cutter, cut into 8 biscuits, gathering scraps to repeat, without reusing scraps more than once. Brush some of the melted butter in an 8-inch cake pan. Arrange biscuits in pan, fitting tightly. Brush remaining melted butter on biscuits. Bake for 18-20 minutes, or until golden. Serve immediately with orange-honey butter. Makes 8 biscuits.

For Orange-Honey Butter: Place all butter ingredients in a small bowl and stir to blend well.
