PRR Pumpkin Custard Pie
1 1/2 cups pumpkin (canned)
6 eggs
2 cups Granulated sugar
1teaspoon salt
1 teaspoon Ground Nutmeg
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 1/2 cups hot milk
1 1/2 cups hot cream
1 Kitchenspoon melted butter

Beat eggs and sugar together for at least five minutes. Mix spices in a very little of the milk and cream until smooth. Add balance of milk and cream and stir this mixture of spices and milk into the first mixture of eggs and sugar. Now place pumpkin puree in bowl and gradually add the liquid mixture to it. Fill pie to within 1/4 inch of the top and before placing pie in oven sprinkle each pie with 1/2 kitchenspoon of melted butter. Bake until well done and of good color

(One kitchenspoon= four tablespoons)

Ginger Muffins

1/2 cup of Butter
1/2 cup powdered Sugar
2 Eggs
1/2 cup molasses
2 Cups Flour
2 teaspoons Ginger
1 teaspoon Cinnamon
1 heaping teaspoon soda
1/2 teaspoon salt
1/2 cup hot water


Cream butter and sugar together add eggs one at a time,then molasses. Add dry ingredients, sifted together, and lastly the hot water. Pour batter into baking pan lined with greased paper or into a cast iron muffin set, bake at medium oven until done.

I saw a show about a Santa Fe cross country train from the 50s. The food was incredible and a guy who worked on the train was trying to find some of the recipes.
