It doesn't have to be Railroad related, all it has to be is Good. It can be for any type of food, Frozen, BBQ'ed, Deepfried, etc.

One of my fav snacks:

Quesadilla/Nachos:
2 Large (Burrito Sized) Tortillas
Refried Beans
Tortilla Chips
Cheese
Salsa or Guacamole
Sour Cream
Taco Meat

Place one tortilla on a plate, cover in a layer of beans & meat. place tortilla chips on top, followed by cheese. topped with Salsa. Place other tortilla on top. Microwave until cheese is melted (2mins in my microwave)
Peal back off top tortilla. Dollop sour cream on top, sprinkle on any lettuce, tomatoes, etc. Replace top tortilla, cut up & enjoy.

Your standard Quesadilla With Bacon.

Bacon (Usually use half a package of bacon sliced in half)
Two Types of Cheese (I use Chedder and Mozzarella cheese)
2 Tortillas (Per Quesadilla)
Cooked and seasoned chicken cut into small cubes.

well, you start cooking the bacon over medium to high heat, while that is cooking you start to cut the chicken into small cubes. Then you start to warm the tortillas, I have a Quesadilla maker, but using a stove with a bit of Cooking oil works good also. Then you assemble the Quesadilla by putting a tortilla on the bottom, followed by a layer of your first type of cheese (Chedder in this case) Then Shred the bacon up into little strips, and place them down on top of the first layer of cheese. Next, you put The Chicken down on top of the bacon...spread it over the tortilla, but do not put too much topping on it, the cheese will melt as it is cooked, and will start to melt out of the Quesadilla if you use too much. Next you put the second Cheese choice on top of the toppings, and Finally put the second tortilla on top of that. Carefully Place your Quesadilla in a frying pan over medium heat for about 3 minutes per side...Cooking times will vary for different stoves, so Check on it. When the first side is Done...CAREFULLY flip it over to cook the other side. When both sides are done, take it out, and place on a Plate with a paper towel to dry the excess Grease off. Let stand for 1-2 minutes, and Cut with a pizza cutter. Enjoy!

Hot Chocolate (or Cocoa if you prefer)

apx. 1C Milk
1.5T Cocoa Powder
1.5T White Sugar
apx. 1/4tsp Vanilla Extract or Nutmeg

in a microwave safe mug, measure in the cocoa & sugar; stir until well mixed. Add Milk, 1T at a time stirring between each tablespoon until mixture is similar to syrup (about 3 tablespoons). Add an additional 4 table spoons, followed by a good stir. Add milk until mug is full, leaving about a centimeter of space below the top. Microwave on high for 30 seconds, remove from microwave, stir & repeat until hot (about 2 mins). NOTE: keep an eye on it during the last 30 seconds as it may start to overflow, if it begins to remove and stir. If you are using nutmeg after 1 min add nutmeg to taste (usually 1/4 tsp) stir and continue microwaving. Add vanilla to taste (about 1/4-1/2 tsp) at end, and stir.

This recipe can be made in a larger scale on the stove, simply stir cocoa in a pot on medium heat after mixing until hot. Add Nutmeg during cooking, and vanilla afterwards.

For a Christmas special, one can use peppermint extract instead of vanilla. CAUTION: peppermint extract is VERY potent use the tiniest bit in your cup!

the cocoa can be a bit trouble some times if your not patient with it. I can't tell you how many times I've had to clean the microwave due to it over flowing. Or have the Cocoa powder not mix into the milk properly.
