Not sure about football yet. I'll decided once there aren't many spots left.
I could run the baseball league, though. My rules though: No fucking RBIs.
That's far away, though. The offensive categories should be AVG, steals, team wins, sacrifices, runs, and singles. 
But seriously, something like a mix of the more traditional stats (average), with SLG and OBP, as well as a few counting stats like homers (and if there has to be something with steals make it net stolen bases) could work..they still need more good stats though, which they could add for next year.

Why not just have EqA? That's true, but then players that do things that don't show up on the box score would be seriously undervalued....and we don't want that here.

What part of the regular scoring system isn't in the box score? Wins and losses. Some players are winners like Derek Jeter.... ....And if we're getting all literal here, you do know no mainstream, free fantasy baseball sites have EqA as a statistical category, right?
Would it bother you if we had wOBA?

Only in the football one though, I don't have enough time anymore to keep up with a baseball league.

Should there be individual defensive players or just the team defense? Since we have lots of people wanting to play, maybe do one of each?
I'd personally like individual players. Like 2/3 LB's, 2/3 DB's and a couple UTIL spots on defense?

Defensive positions are No Limit. DL-2 DB-2 DUTIL-1
LB's count as DL so it's better that way. Should I add 1 team DEF?
