I've been told that a karate chop to the back of the head suppose to kill the squid instantly. Is suppose to so how stop the tube from getting tough or something. I do do this to the squid I catch, but can you really tell the difference when you eat them?? Personally for me squid is bait but I do give the away as others really enjoy them. Who else gives them a karate chop or is their something else you do when you catch them?? |

I dont give them a karate chop, I just rip their straight off once I've caught them and always seem to be nice and tender for me, love to know where the theory came from though!! |

http://www.youtube.com/watch?v=Y0RcB6Mq2D0 There ya go RH skip to about 30 sex in to avoid all the jap mumbo jumbo. basically a sharp blow between the eyes and the hood will kill them quickly. Or straight into an ice slurry Or rip their heads off Or knife spike them just above but between the eyes my way is just to pinch them between the hood and the eyes. it will separate a bit and they will turn white straight away (like the vid). very quick and easy. no messing about. |

I do the same as wookiee. a pinch between the eyes end mantle kills them straight away, gives you a good grip and you can unhook them at the same time. it's a top tip |

I've got a small floating cage that I hang over the side of the boat. I think its originally designed for live bait keeping. I put the squid in that while fishing and hang it in the water. They squirt out thier ink and make them much easier to clean. Once done, on ice for the trip in. |

The toughness has a lot to do with over/under cooking too. mine go straight on ice. any water and they can recharge the ink sacks. |

Pull there head's off in ice then into the scaller bag on the way home [dont just use the large mesh ] clean's and tenderizes them . |

Get them home and put them in the freezer till half frozen. Then clean them half frozen, no mess and easy to clean. Cut into rings and lightly seasoned with ground chilli and garlic. Thrown into a hot wok (with grape seed oil) and a table spoon of Hokkien sause. Cook for about 45 seconds. |

I try both methods of killing them and its same same on tast/tenderness. With cleaning them I keep em on ice, get home and drink beer and make a mess in the woman's kitchen sink either that night or the next day

to clean them i use a scaling bag. they come up a treat. i normally put ten in at a time depending on size and a slow cruise back to the boat ramp. quick tidy up at home and good to cook. |
