Dressing out a Pheasant

I am sure we all have our own techniques and I did two pheasant tonight in 19 minutes start to finish, in the past I have removed the head by snicking through the neck with the knife, however there's always that little piece of neck which looks better removed but is a tad awkward to grasp. Anyway tonight I cut above the crop and instead of cutting all the way through as in the past I pulled head and neck back and free - Bingo !! Much easier and a far better job with all of the neck being removed, it only then leaves the crop to be emptied and trimmed up for presentation. You may have been doing it this way for years but I haven't so I thought I'd share the suggestion with you.
