um. while that may look delish, it does not hold a candle to a fresh pizza (usually frozen...well, started frozen...well, I bought the damn thing frozen, ok) aaaannnnd i forgot what i was talking about............................................................................................

GOT IT! tired of burning your mouth on fresh out of the oven pizza? put cottage cheese on it. yeah, fork of cottage cheese on top of a scalding hot pizza...you get to eat the pizza right away and the cold cottage cheese protects the roof of your mouth...and it's really damn good.

My simple sloppy joe's...

Ground beef
Red onion
Green pepper
ketchup (yup)
yellow mustard
brown sugar
spices(I am always experimenting, but the constants are: Lawrey's, crushed black pepper, chili powder, red pepper flakes, & some herbs)

Start by browning 1ish pounds of good ground beef(as lean as you can get) with diced red onion & green pepper (I use about a 1/3 of red onion and 1/2 the green pepper and dice them into large chunks) and the first round of spices.

once brown, drain and add 3/4C ketchup & 1tsp yellow mustard (careful here, because the mustard will really change the flavor depending on how much you add)

Now add 3tblsp of brown sugar and any more spices/herbs to flavor.

It's crazy simple and really damn good. The red pepper flakes give a good amount of heat and the ketchup/brown sugar make it pretty sweet as well.

that looks really easy...until you try. I've been trying the "rolling the bell pepper" cleaning method for while. no luck yet haha.

i normally just cut a circle around the top, then twist and the top comes off with all the center seed shit. Well most of them.

I will look later, but I've seen people just lay it on it's side, insert knife parallel to the board, and just fillet it (basically). They push the blade forward, while holding the pepper. Granted, my knives are crazy dull...been meaning to address that.

do you know how to properly hold a knife?

I just learned how to this year..... people show you how to chop and stuff all the time like that video, but nobody ever shows you how to hold it. So I always just grabbed it by the handle and tried to get it done.

Turns out you are supposed to pinch the blade right after the handle with your thumb and index finger.... wow no shit? bing instant knife control, it feels strange but you can go to town without feeling like if you slip you are headed for the ER.
