If my opponent attempts to recruit an equipment onto his character and I allow that effect to go on the chain, then I respond by using Sentry to remove that character from the game... wouldn't that equipment be sent to KO pile?

Sentry's effect would resolve first removing the character then the recruit effect of the equipment would try to respond an have no target... what happens to that card? KO pile or back to the owner's hand?

I believe the equipment goes to the ko pile since it has nothing to equip to.

Yep, that's correct. Anytime an equipment recruit tries to resolve, it re-checks its equipping legality-- does the target still exist? Does it still meet all the restrictions (team affiliation, visibility, etc)? If for any reason the equipping target is no longer legal, the equipment hits the KO'd pile.
