Pairing Structures a la MANTIS; What The Heck?

How do some of the different pairing structures in MANTIS work? I guess I'm specifically talking about Grand Melee and Open Dueling. They sound awesome, but what do they mean?

Grand Melee – This tournament format does not have the traditional pairing structure. Instead, players are awarded a point for each player they defeat. At the end of the tournament, the last remaining player may get bonus points, and the entire tournament. This system can also be used to keep track of the number of players enrolled in an Open Dueling tournament.

Open Dueling — Open Dueling players play against other Open Dueling participants as well as main tournament players who are between matches. After an Open Dueling participant has played five matches, upon confirmation of the results by the event organizer that player will receive one complimentary booster pack provided by the organizer as a prize.

So, basically, Open Dueling/Grand Melee is a format where anyone can play anyone, in any order, as many times as you like,and then you report the results. MANTIS tracks the results and scores all participants accordingly. (Think Arena League if you're familiar with Magic the Gathering). They are the same format, from a play perspective.
